Coconut cream and coriander? Sounds like a Thai curry. No it’s a cake! A fresh green sponge cake, no eggs, all good.
CORIANDER COCONUT CAKE
Ingredients | Makes 1
• 1 can Coconut Cream (lite is best as it has a higher water content)
• 1/4 cup Castor Sugar (or any fine sugar)
• 1 handful Coriander Leaves
• 1 tsp Coriander Powder
• Pinch of Ground Ginger
• Pinch of Allspice
• 1 cup Self Raising Flour (high fiber is best)
• Squeeze of Lemon
• 3 heaped tbs Icing Sugar
Cook at 180°C for 25mins.
Garnish with some small coriander sprigs.
