ST PATRICKS POTATO SALAD | Green, Vegan & Green!

A potato salad I put together for St. Patrick’s Day. It’s green in 2 ways and 100% egg-free!

Ingredients | Makes 1kg
• 1kg Potatoes
• 1 tsp Salt
• 2 tbsp Olive Oil
• 1 large Red Onion (thinly chopped)
• 4 Cloves Garlic (thinly sliced)
• 1/2 tsp Cumin Seeds
• 1/2 tsp Mustard Seeds
• 1/2 tsp Cracked Black Pepper
• 1 bunch English Spinach (fresh not frozen)
• 1/2 cup Coconut Cream
• 1 tsp Salt (extra)
• A pinch Coriander Powder
• A pinch Ginger Powder

Serve in a green bowl for added effect.
