PURPLE CARROT COCONUT SOUP | Perfect Winter Warmer!

A unique soup made of purple carrots and coconut milk, try this out.

PURPLE CARROT COCONUT SOUP
Ingredients | Serves 6 – 8
• 1/2 – 1 tsp Salt
• 8 medium Purple Carrots
• 2 tbsp Rice Bran Oil
• 1 tsp Mustard Seeds
• 6 chopped Garlic Cloves
• chopped Ginger (same quantity as garlic, approx. 2 – 3 cm)
• 800 ml Coconut Milk (2 cans)
• 4 split Green Chillies
• 1 1/2 tsp Salt (extra)
• 2 Star Anise
• 4 Cloves
• pinch Black Pepper Corns
• 1 tsp Coriander Seeds
• 1 tsp Fennel Seeds
• 1/2 tsp Cumin Powder
• 400 ml Coconut Milk (1 can, extra)
• Parsley to serve

Serve hot, if re-heating just add a little water to loosen it up.
