SOFT LEMON COOKIES | Vegan Lemon Biscuits!

A Vegan Lemon Biscuit that comes out super Soft, extra tasty and very Lemony!

Ingredients | Makes 14
• 2 1/2 cups Self Raising Flour
• 1/2 cup Castor Sugar
• 1 tsp Ginger Powder
• Zest and Juice of 1 Lemon approx.:
– 1/2 – 1 tsp Lemon Rind
– 1/4 – 1/2 cup Lemon Juice
• 1/2 cup Almond Milk
• 1/2 cup Rice Bran Oil
Cook at 180°C for 12 – 15 mins.

Eat hot or Cold or whatever you feel like!
